Food Friday: The Cousin Anne-Inspired Salad



Hello again!

So sorry for my inconsistent timing with the Food Fridays.

If you follow me on Instagram you would be have been expecting this recipe. This is a salad that I have eaten practically every day for almost a whole week now. I have it as a second part to my dinner and it tastes so good!

I decided to call this 'The Cousin Anne-Inspired Salad,' because it was inspired by a salad my aunt made for me which she said that my cousin had made for her some day and everyone loved it. This is not 100% my cousin's recipe as hers contains dairy (which I'm allergic to) and I added ingredients to the recipe.

Food Friday!!: Potato Parcel Meal





Parcel meals have become things I really enjoy to prepare and to eat now especially as I am at uni till quite late at night often (some times I don't get home till 11pm). With parcel meals, you don't have to keep standing by a stove. All the work you need to do is to just cut up some ingredients, pile them together, wrap them up and stick them in an oven. It's so simple! Here's my recipe for a delicious potato parcel meal.

Food Friday!!: Nigerian-Inspired Dishes (in Collaboration With VegansOfNigeria)

Food Friday is here again!!

This week, I have collaborated with Wandoo Ityavyar of VegansOfNigeria to bring two Nigerian-inspired dishes to you (well....their recipes).

My inspiration for deciding to have this theme for this week's Food Friday was that, unfortunately, I am not particularly in touch with my Nigerian culture, especially as I do not live in Nigeria. I am not much of a fan of Nigerian foods, to be honest, but I am a fan of foods inspired by Nigerian dishes. Maybe it's because I don't like the taste of meats (or that I am just a picky eater ;) ).

Wandoo and I both do not eat meats and we both happen to be Nigerian so, we are bringing to you our take on vegan versions of Jollof Rice and Groundnut/Peanut Soup, respectively.

Food Friday!!: Gluten-Free Pancakes (in Collaboration with Dubai Fit Foodie)



It's another Food Friday!!!!

This week I have collaborated with Dubai Fit Foodie to bring two awesome gluten-free pancake recipes to you.

When I decided to make this week's Food Friday recipe a pancake one and asked Gbemi, of Dubai Fit Foodie, if she would like to collaborate with me, I didn't realise that Tuesday's going to be Pancake Day/Shrove Tuesday! So, these recipes are coming to you at a good time.

As usual, my recipe is vegan. However, Gbemi's is vegetarian, but I will put vegan alternatives to the two ingredients that make it vegetarian in parenthesis.

Food Friday!!: Cinammon-Vanilla Chia Pudding



This has become my favourite thing to eat in the morning. It's so delicious!

Ingredients
  • Chia seeds
  • Almond milk
  • Vanilla paste
  • Cinnamon
  • Maple Syrup


Method
  • In a cup/mug containing some almond milk, add the cinnamon, vanilla paste and maple syrup to taste and give the milk a good stir to ensure the ingredients have been well incorporated into it. I like to add enough cinnamon, vanilla paste and maple syrup to make the almond milk taste like melted vanilla ice cream.

Food Friday!!: Vegan Pizza





Welcome to another Food Friday!!

Today, I am going to give you the recipe to the first pizza I ever made. As I am allergic to dairy (as seen in my previous blog post), this recipe does not contain cheese on it and is therefore a vegan pizza.

This pizza was so good that my non-vegetarian/non-vegan family ate it! Honestly, each time I've made pizza, the vegan one just seems to vanish within seconds! I'm glad my family (including cousins, aunties and uncles) love it!

How My Instagram Page is Not Completely Honest

Hey!

So some of you follow me on Instagram and like a bunch of my pictures. Due to this, I need to be honest with you in order to ensure that you do not completely follow what you see in the pictures as most of the time, everything you see was just for the purpose of a picture.

What do I mean?

In over 90% of the pictures, you see a quantity of the food which is not the true quantity that I eat. I eat 2-3 times (sometimes 4x) the amount of food which I take a photograph of and upload. I eat a lot of food! Therefore, following the portion sizes in the pictures is not the best thing to do if you are trying to "eat like I do."

Moving to London + My Plans + My Lifestyle + More....

I am in the kitchen eating something that I don't feel I should call a 'curry,' but was inspired by the idea of making a curry. What I made was completely oil-free and yet, it's perfect. This got me to think about my life next month and the months/years following that.

Honestly, I haven't felt my best this summer as I am living with family and my family doesn't eat the healthiest of foods. I really miss feeling awesome all the time and always being full of energy. I also miss cooking for myself and sorting out what I eat through out the week and having access to fresh fruits and vegetables.

I haven't mentioned this on any of my blogs, but next month, I'll be moving to London and I plan on eating even much more healthily than I did back when I was in the west country. I plan on eating more raw foods than I did before and I ate at least on raw meal (usually dinner). I plan on waking up in the morning and having a melon for breakfast or a bunch of mangos or a papaya filled with clementines, apples, berries and passionfruit, coming back from school or wherever, in the afternoon and having more fruits or a nice, healthy home-cooked meal and having a huge fruit and veggie salad for dinner.

The thing is, London is an expensive place. This got me to think of how I can continue this lifestyle and make it even healthier without being broke often. I started looking at nearby farmer's markets, looking for a nearby Morrisons, online stores that deliver fresh and organic produce to people living in London, such as PlanetOrganic, et cetera. All of this could still be very expensive.

Here's where my curry-like dish comes in. Some of the ingredients I used were frozen. Therefore, this meal cost less than a pound and was also relatively quick to make and the ingredients had already been chopped up (and had nothing added to them). As some of you know, some frozen produce tend to be cheaper than the same products, but when they have not been frozen. Also, freezing produce prolongs its shelf-life and keeps the food fresh and with its nutrients longer.

So, I have decided that I am going to purchase quite a number of frozen produce and for the items that are cheaper to buy not frozen, I will purchase and keep them in a freezer till I need to use them. I have also decided that I will buy quite a number of unripe produce if they are on sale and ripen them at home and of course, eat out and order food as little as possible too.

If I do order food as I know I will some times because I know I did it this past year and I wasn't even an architecture student then, I will order and support vegan restaurants such as Juicebaby.

I plan on 99% of what I eat being vegan. Why I did not say 100% is because I know that if I go out with friends, if I can't find a vegan meal on the menu and wherever we're eating can't make the food vegan (for some reason), I will eat vegetarian food. Also, I don't plan on telling my family that I might be going vegan as they still haven't accepted that I am vegetarian and haven't accepted how I eat yet and my grandfather actually offended me yesterday when he said something about "how I should eat." So, if I can cook my own food while with family, I will and if I can't and there happens to be vegetarian food available, I will eat as a vegetarian.

So, yeah, I've finished eating my curry-like dish and I think I've pretty much said all I thought to say in this blogpost (and more) so, I'm going to end here.

"Now fit enough to work out" Reason For my Tweet

"Now fit enough to work out."
This statement does not mean that I was ill because, I haven't been ill. However, I have been physically unable to work out for some time now. Why? Well, as some of you know, I had surgery done on my arms some years ago. I kind of suffered from a not-as-bad form of the reason for the surgery for a while and that didn't have much to do with my health, but me reacting to something (hard to explain, but just know that my body is very sensitive to things and my mum's family is full of allergies and unfortunately, I inherited some of those allergies).

Okay! So I could not move my arm. I was pretty much stuck in a position that was like my arm was being held by a sling. Any form of movement hurt and I could not put weight on my arm so I could not carry things which pretty much meant that I had to use only one arm for a while which was pretty frustrating.

The issue with my arm also lead to me being sleep deprived as I was in pain most of the time and could not find a good position to sleep in as it felt like "gravity was working against me" if I could put it like that. Sleep deprivation lead to me not even wanting to think of working out or doing anything, but crying.

Through out this time, I did not go to a hospital or take any medication because I didn't want to risk returning to that state of medicine-induced depression or having to have another surgery as my initial surgery was a very traumatic experience for me. I also knew that my body was capable of fighting this allergy this time around as I am MUCH healthier than I was when I initial had the allergy and had to undergo surgery.

To help with "treating" myself, twice, I had a hot water bottle on my in a way that it touches my arm as like a heat compress and honestly, that put me in a whole lot of pain especially after taking the bottle away. I also draw some warm water with about a quarter of a teaspoon of cayenne pepper and some fresh mint leaves in it which I must say helped a whole lot with the pain as the first time I tried it, after a half hour, I couldn't feel the pain anymore and was able to finally get a night's rest. After stopping the cayenne drinks, I started drinking water with a bit of turmeric in it (and I had been praying for my arm too). I started seeing results and my body started to like....."cleanse" itself, if I can phrase it that way.

I went to a Hillsong Conference, as you must know if you follow my Facebook page, and at the conference, I was dancing like crazy every single day! I experienced no pain and my arm could move! It's practically 100% healed. I can use my arm perfectly!

At the conference, I also noticed that I had put on quite a bit of weight (which made my mum happy, but annoyed me as I also don't feel as good as I know I can feel). I decided that I was going to start working out again and I actually planned on resuming working out next month, but today, I woke up and felt like working out so, I got out of bed, changed into a cute workout outfit and hit the elliptical machine then did some kickboxing, zumba and "intense" dance cardio. I really enjoyed it! I didn't like the sweat as I hate being sweaty, but I like the fact that I worked up a lot of sweat and all my muscles were ice cold by the time I was done.

I am happy to be back on this journey of working out practically every day and I am looking forward to my annual detox next year :).

Responding to things I've been told concerning how I eat

So, in this blogpost, I will be responding to the common questions and statements I've got from people concerning what I eat now. All these comments have come from meat-eaters so, if you're a meat eater, you may have wondered this and I'm here to clear it up.

Everyone who has asked me any of these questions or similar questions or made any of these statements has known me for a little over a year, at least. This means that they knew me as an anaemic person, as someone who had chronic headaches, who suffered from severe fatigue and pretty much was always sick.

Okay! So, I'll start my response now:

Question: "Don't all the fruits and vegetables you eat give you the shitz?"
Response: I'm guessing that when you said that she was referring to a running stomach or something along that line and, well, no, my eating more raw fruits and vegetables hasn't resulted in that. I have bowel movements daily that are perfectly normal and the idea of getting the waste products out of my system instead of harbouring them in my body for days or weeks sounds good to me.

Statement: "Eating so much fruits and vegetables is unhealthy!"
Response: We've been told many times to eat our fruits or eat our veggies because they're healthy so.....yeah. I believe that raw fruits and vegetables don't only make us feel good and full of energy, they are also nature's medicine. I have always loved fruits and eaten them whenever my mum bought some (although I didn't eat half as much as I eat now). I have been sick for most of my life. I do not remember a year that I haven't been in a hospital, sick bay or health centre. Ever since I began to eat more raw fruits and vegetables, I haven't been to any of those health institutions (if I can call all of them that), I haven't needed to as I haven't been sick or experienced any of the ailments I used to. So, yeah, my eating so much fruits and vegetables is most definitely not unhealthy. Do you know how amazing it feels to have spent most of your life being sick and to finally go almost a whole year without being sick? It's wonderful!

Statement: "You need to eat meat!"
Response: The day a butcher's daughter told me this. Oh me, oh my. All I had to say to her was, "I do not need to eat meat." Okay! So, as most of you know, I don't eat meat because I don't like it's taste. When I went vegetarian, I hadn't done any research on it. The word 'vegetarian' was just a label I found for people like me who did not eat meat (I think I found it on Wikipedia or something when I googled not eating meat). Okay! So, due to not doing my research on vegetarianism, I ended up becoming anaemic as I became iron-deficient. I'm not helping myself here, am I? You see, I was iron deficient till last summer. I had been taking iron pills for years, but now, I don't need them. I'm not anaemic anymore. Do I eat meats? No. I overcame anaemia through raw fruits and vegetables (and thanks to God :) ). Did you know that spinach has more iron than beef and chicken (and possibly many other meats) and kale has more iron than chicken and over half the amount of iron in beef? Yup! So, I overcame anaemia by increasing my intake in those. Also, vitamins, especially vitamin C (I think that's the one) aids in the absorption of iron into the blood stream. I eat a lot of fruits rich in vitamin C so.....yeah, my body is absorbing that iron! :) So, yeah, I don't need to eat meat. I'm doing perfectly fine not eating meat.

Statement: Vegetarianism (and veganism) is (are) not supported by the Bible
Response: I can't remember how that statement was made word for word, but here is my response to it:

  • Genesis 1:29 - And God said, “See, I have given you ever herb that yields seed which is on the face of all the earth, and every tree whose fruit yields seed; to you it shall be for food.”
  • Genesis 2:9 - And out of the ground the Lord God made every tree grow that is pleasant to the sight and good for food. The tree of life was also in the midst of the garden, and the tree of knowledge of good and evil.
  • Genesis 2:16-17 - And the Lord God commanded the man, saying, “Of every tree of the garden you may freely eat; but of the tree of knowledge of good and evil you shall not eat, for in the day that you eat of it you shall surely die.”
It is not till after the flood that we ever read of God giving people permission to eat animals in the Bible: Genesis 9:1-4 "So God blessed Noah and his sons, and said to them, “Be fruitful and multiply, and fill the earth. And the fear of you and the dread of you shall be on every beast of the earth, on every bird of the air, on all that move on the earth, and on all the fish of the sea. They are given into your hand. Every moving thing that lives shall be food for you. I have given you all things, even as the green herbs. But you shall not eat flesh with its life, that is, its blood."

Okay! To me, vegetarianism and veganism are supported here. Adam and Noah had about a 1100 years age difference. The time between the creation of the earth and the flood was like 1656 years. So....I take that to be over a thousand years of pure veganism in Biblical times.

Some people could argue that Noah and his family were given permission to eat animals because of the time it takes for fruit bearing trees to produce fruit, but I don't know if that's God's reason for giving them permission to eat the animals and I'm not going to get into that as it is not the point of my response.


So, yeah, I've responded to the common questions and statements now. Here's my question:
  • Why is it that no one really cares if I go off rice or pasta, bread or milk (one of my cousins hates the taste of milk I should add), but there is such a big deal about me going off meat?
  • Why do people make such provocative statements over things that they are not used to?

I'm Baaaaaack

Hi,

So, I'm sorry I took this blog down. I was just pissed and stressed out and.....anyways, I'm back and I'm the healthiest I have ever been! :)

Here's a quick update on my life thus far:

  • I have overcome one of my allergies! Yay! Isn't that wonderful? :)
  • My weight is good and I am actually not worried about my weight right now. I like my body and I like where I'm at right now. Like even when for some reason, I feel bloated, I know by morning, I won't neither would I look bloated.
  • I am full of energy and like no matter how late at night it is or how tired I am, I can drop and give you 20 pushups or 100 squats or sit ups!
  • I haven't worked out as much as I used to because of stress and school and performances. However, I have started ensuring I do at least 100 squats and 50 pulses in squat position without breaks in between at least once everyday and also, some push ups. I seem to love pushups now and for a while, I was working out only my arms because I just like working them out. However, I was forced to remember that I need to workout my entire body especially my thighs and abs which aren't as toned as I'd like them to be right now. My arms look awesome flexed. Those biceps are on point! I can also balance on just my hands a little longer than I've ever been able to without spraining my wrists. That's amazing! Now, I'm just working on toning up everywhere and getting a faint 4-6pack :)
  • I eat 4-6 times a day now. Yup! Not 2 or 3 anymore. Now, I eat 3 cooked meals and 1-3 raw vegan meals a day and I snack on raw fruits and vegetables and I seem to have a newfound love for Medjool dates so I love nibbling on them whenever! :) The raw fruits and vegetables help with digestion and bowel movements and it just cleanses me from the inside out.
  • My skin looks awesome! I still get 1 or 2 lil zits towards that womanly month of the week, but once that week's ending, the zit(s) go and I'm left with awesome skin again. Mind you, I still have dry skin that peels in some areas if not moisturised after a few minutes out of the shower. It takes a bit longer before it starts peeling now and not all the places that peeled on my face are still peeling. I lock in moisture on my skin using just raw, extra virgin coconut oil now and as for my face, I use coconut oil on my lashes, lips and eye lids and organic shea butter (sent over from Nigeria by my grandmother. bless her) on the rest of my face. I use very little of the shea butter because I don't want a shiny face neither do I want to darken my face as my mum gets a dark film on her skin from shea butter and I've heard of some people darkening from it. So far, I haven't darkened. I don't use the coconut oil on the rest of my face because, as once mentioned on this blog, I seem to react to it on all other parts of my face (same with my cousin).
  • Also, I'm going to end here as this is getting very long, I am no longer anaemic, I don't get dizzy, daily/frequent headaches or any of those things anymore! I am not excessively tired all the time. My immunity is up! Like the old me would get sick once someone coughed or sneezed around me, but now, people are getting sick at my school as a bug is going round and I feel just fine! I even went to the health centre to visit a friend who was very sick and I'm still fine! I haven't seen a doctor or nurse because I've been sick since the whole detox and lifestyle change! I haven't had any medications or supplements whatsoever! Even vitamins and paracetamol! Nada! I don't need them! I am healthy and I am happy and I'm glad my parents seem to be accepting my lifestyle and vegetarianism a little more now that I've been updating them on my health and everything. I wish I had learnt more and done more research on my diet and all that when I stopped eating meats as I could've reaped all these benefits a long time ago! It's terrible always being sick and now, I'm happy not to be anymore! It feels awesome being healthy for once! :)

My Possible Lifestyle Change + Why?

So....I've been looking into a raw vegan lifestyle. Actually, I've just been watching Kristina of  FullyRawKristina and Yulia of RawsomeHealthy's videos and....well....I am not going to become a raw vegan, but I am going to incorporate more raw, vegan foods into my diet. I am considering eating a raw breakfast, a cooked lunch and a raw dinner depending on how lazy I am at dinner time. If I'm to lazy to go for soups at lunchtime, and I hope dinner's good, I'll eat raw at lunch and if dinner ends up being bad, I'll eat raw at dinner too. (Incase I didn't mention it before, I'm a college student who lives at school most of the time, and my school provides most of my meals).

Why do I plan on incorporating more raw foods into my diet?

Well....if you read the Bible or (in case you've never read a Bible) any old historical book, you will notice that the people lived WAY longer than we do now. Also, you might notice that your grandparents or (if they're still alive) great-grandparents looked much healthier in the pictures of them while they were young than now. Why? Well....they didn't have all the artificial and synthetic things we have in our foods now. They didn't have so many pesticides and antibiotics in the food they ate and....well.....some of the things we eat now that are totally not good for our health, they didn't have it back then. Food was food not a bunch of chemicals and food.

Our sugar intakes have increased over the years resulting in people being more obese, becoming diabetic, having a chronic heart disease or even cancer:

Our intake of sugar-sweetened drinks has increased too:
Fruit drinks are pretty much unhealthy, just like fizzy drinks. Why? If you notice, on the ingredients list, many of them have the words, "sugar" or "sweetener" on them and whichever of those words is on there is never at the bottom of the ingredients list meaning that there is a significant amount of artificial sugars in what you're drinking so....basically, it's a fruit and sugar drink. Sometimes, it's actually a fruit, flavouring and sugar drink or even just a flavouring and sugar drink!

Our calorie intake has increased quite significantly because of aggressive marketing, the increase in sugar consumption, processed foods, et cetera:

The wheat we eat now is less nutritious that the ones our grandparent and their parents and those before them ate:

We have started eating fast food more often and in higher quantities and we have started spending more on processed foods that we cook or eat in our homes.
We are killing (or just harming) our bodies with what we put in them.
Incorporating more raw vegan foods into my diet, I will be eating even healthier, getting all the nutrients I need and because I prefer to eat organic foods, I won't be ingesting all the pesticides and other toxic things that other foods might have. By eating raw vegan, my body will be able to detox itself and simply work better.
Please note that I do not plan on going 100% raw vegan because I pretty much have an eating disorder called SED so if I go 100% raw vegan I will end up protein-deficient and deficient in a few other things. I am currently a lacto-ovo vegetarian, have been for almost 8 years now and I plan on continuing to be a lacto-ovo vegetarian although I'll be eating as a raw vegan every now and then.
Why do I plan on going more raw vegan with my life?
Well....every issue I have had with my body, the allergies (including the reason I had to have surgery on my arms), have been because of things I have put on my skin and what did these things have in common? Chemicals. Toxic. Harsh. Chemicals.
There was a time I started reacting to my soap, changed it up to one with more natural ingredients, my skin got better, but I started reacting to that one too. I started reacting to my body lotion and the only thing "natural" in that one was sea salt, if I'm right. My hair didn't look so healthy back when I used any product off of the shelf to care for it. The reason I had surgery on my arms was related to a deodorant use and the chemicals in the deodorant. I've also had some serious skin discolouration from the stuff I've put on my skin.
By using more raw vegan things, I am keeping all those nasty, harsh things away from my body. I went on an underarm detox thing a while back where I used apple cider vinegar straight instead of a deodorant (I ran out of deodorant and was unable to purchase more). My underarms did pretty well and were odourless throughout that period of time! I applied the cider vinegar on it in the morning, at around 6:30am and by the time I went to bed at around 10pm, my underarms were still odourless.
I plan on using coconut oil as my body lotion (which I do every now and then now), eye cream (I always use it around my eyes), lip balm (always use it as this) and extra virgin olive oil on my face (I break out when coconut oil goes on my cheeks or forehead). I might even switch between a natural butter and coconut oil or make a mix of both for when my skin needs something a little stronger/thicker or a little more protection especially from UV rays.

I believe God didn't put us in a place where we can't survive. I'm pretty sure He didn't place us in a world where we can't heal and be healthy. What I mean, is that He gave us things that we can live with and use in our everyday life that are actually good for us. Natural things are best for us.
My grandparents had much healthier skin when I was younger and in the pictures I see of them before I was born than they have now. Why? Most of the products they use now are so chemical-laden and less natural than the ones they used to use. My nana and I both have really sensitive skin and we have had quite a number of skin allergies thanks to what we've put on our skins.
