Food Friday: The Cousin Anne-Inspired Salad



Hello again!

So sorry for my inconsistent timing with the Food Fridays.

If you follow me on Instagram you would be have been expecting this recipe. This is a salad that I have eaten practically every day for almost a whole week now. I have it as a second part to my dinner and it tastes so good!

I decided to call this 'The Cousin Anne-Inspired Salad,' because it was inspired by a salad my aunt made for me which she said that my cousin had made for her some day and everyone loved it. This is not 100% my cousin's recipe as hers contains dairy (which I'm allergic to) and I added ingredients to the recipe.

Food Friday!!: Easy Quick "J-Rice" Burrito






I know I missed a Food Friday and I am so sorry about that. I need to set reminders for myself as I am so out of routine, at the moment.

This week's Food Friday recipe is not a conventional one. As a matter of fact, it raises quite a number of eyebrows, but I promise you, it tastes pretty good. It was inspired by both a Nigerian and a Mexican dish and...well....you just have to try it! :)

Food Friday!!: Potato Parcel Meal





Parcel meals have become things I really enjoy to prepare and to eat now especially as I am at uni till quite late at night often (some times I don't get home till 11pm). With parcel meals, you don't have to keep standing by a stove. All the work you need to do is to just cut up some ingredients, pile them together, wrap them up and stick them in an oven. It's so simple! Here's my recipe for a delicious potato parcel meal.

Food Friday!!: Nigerian-Inspired Dishes (in Collaboration With VegansOfNigeria)

Food Friday is here again!!

This week, I have collaborated with Wandoo Ityavyar of VegansOfNigeria to bring two Nigerian-inspired dishes to you (well....their recipes).

My inspiration for deciding to have this theme for this week's Food Friday was that, unfortunately, I am not particularly in touch with my Nigerian culture, especially as I do not live in Nigeria. I am not much of a fan of Nigerian foods, to be honest, but I am a fan of foods inspired by Nigerian dishes. Maybe it's because I don't like the taste of meats (or that I am just a picky eater ;) ).

Wandoo and I both do not eat meats and we both happen to be Nigerian so, we are bringing to you our take on vegan versions of Jollof Rice and Groundnut/Peanut Soup, respectively.

Food Friday!!: Gluten-Free Pancakes (in Collaboration with Dubai Fit Foodie)



It's another Food Friday!!!!

This week I have collaborated with Dubai Fit Foodie to bring two awesome gluten-free pancake recipes to you.

When I decided to make this week's Food Friday recipe a pancake one and asked Gbemi, of Dubai Fit Foodie, if she would like to collaborate with me, I didn't realise that Tuesday's going to be Pancake Day/Shrove Tuesday! So, these recipes are coming to you at a good time.

As usual, my recipe is vegan. However, Gbemi's is vegetarian, but I will put vegan alternatives to the two ingredients that make it vegetarian in parenthesis.

Food Friday!!: Coconut Curry + Cauliflower Buffalo Bites





It's a new Food Friday post!!

This has got to be the best curry I have ever made. I had it for three days and loved it more every day. It is awesome with rice and awesome with boiled potatoes too!

The buffalo bites (which were gluten-free) tasted much better than I expected they would too! You might not know this, but since I was a kid, I've hated cauliflower. This might be because my mum forced me to eat it, who knows?

As I have become more plant-based and started eating fruits and vegetables in MUCH larger quantities, I felt that my palate might have adjusted a bit and like I could be creative with the vegetables I hated as a kid. So, I added my worst tree monsters to this dish - broccoli and cauliflower and guess what! I loved it! I even added broccoli to a vegan stroganoff I made about two days ago and it was so good!

Anyways, enough with my rambling.

Food Friday!!: Vegan Pizza





Welcome to another Food Friday!!

Today, I am going to give you the recipe to the first pizza I ever made. As I am allergic to dairy (as seen in my previous blog post), this recipe does not contain cheese on it and is therefore a vegan pizza.

This pizza was so good that my non-vegetarian/non-vegan family ate it! Honestly, each time I've made pizza, the vegan one just seems to vanish within seconds! I'm glad my family (including cousins, aunties and uncles) love it!

Introducing Food Friday!

    I always look forward to their videos and nowadays, I look forward to Jenny's the most (and MangoIslandMamma) as I discovered her most recently, she is a minimalist and her food always looks really good. She also mainly makes cooked vegan dishes (so does Anja on CookingWithPlants) and as I live in ye ol' England, I like to have warm-hot cooked vegan meals especially in the evening (I tend to be raw vegan for breakfast on most days). Jenny is also such a sweetheart. She is one of the sweetest YouTubers, in my opinion. When you read her replies to your comments, be it on Instagram or on YouTube, you can't help, but smile.

    How My Instagram Page is Not Completely Honest

    Hey!

    So some of you follow me on Instagram and like a bunch of my pictures. Due to this, I need to be honest with you in order to ensure that you do not completely follow what you see in the pictures as most of the time, everything you see was just for the purpose of a picture.

    What do I mean?

    In over 90% of the pictures, you see a quantity of the food which is not the true quantity that I eat. I eat 2-3 times (sometimes 4x) the amount of food which I take a photograph of and upload. I eat a lot of food! Therefore, following the portion sizes in the pictures is not the best thing to do if you are trying to "eat like I do."

    Moving to London + My Plans + My Lifestyle + More....

    I am in the kitchen eating something that I don't feel I should call a 'curry,' but was inspired by the idea of making a curry. What I made was completely oil-free and yet, it's perfect. This got me to think about my life next month and the months/years following that.

    Honestly, I haven't felt my best this summer as I am living with family and my family doesn't eat the healthiest of foods. I really miss feeling awesome all the time and always being full of energy. I also miss cooking for myself and sorting out what I eat through out the week and having access to fresh fruits and vegetables.

    I haven't mentioned this on any of my blogs, but next month, I'll be moving to London and I plan on eating even much more healthily than I did back when I was in the west country. I plan on eating more raw foods than I did before and I ate at least on raw meal (usually dinner). I plan on waking up in the morning and having a melon for breakfast or a bunch of mangos or a papaya filled with clementines, apples, berries and passionfruit, coming back from school or wherever, in the afternoon and having more fruits or a nice, healthy home-cooked meal and having a huge fruit and veggie salad for dinner.

    The thing is, London is an expensive place. This got me to think of how I can continue this lifestyle and make it even healthier without being broke often. I started looking at nearby farmer's markets, looking for a nearby Morrisons, online stores that deliver fresh and organic produce to people living in London, such as PlanetOrganic, et cetera. All of this could still be very expensive.

    Here's where my curry-like dish comes in. Some of the ingredients I used were frozen. Therefore, this meal cost less than a pound and was also relatively quick to make and the ingredients had already been chopped up (and had nothing added to them). As some of you know, some frozen produce tend to be cheaper than the same products, but when they have not been frozen. Also, freezing produce prolongs its shelf-life and keeps the food fresh and with its nutrients longer.

    So, I have decided that I am going to purchase quite a number of frozen produce and for the items that are cheaper to buy not frozen, I will purchase and keep them in a freezer till I need to use them. I have also decided that I will buy quite a number of unripe produce if they are on sale and ripen them at home and of course, eat out and order food as little as possible too.

    If I do order food as I know I will some times because I know I did it this past year and I wasn't even an architecture student then, I will order and support vegan restaurants such as Juicebaby.

    I plan on 99% of what I eat being vegan. Why I did not say 100% is because I know that if I go out with friends, if I can't find a vegan meal on the menu and wherever we're eating can't make the food vegan (for some reason), I will eat vegetarian food. Also, I don't plan on telling my family that I might be going vegan as they still haven't accepted that I am vegetarian and haven't accepted how I eat yet and my grandfather actually offended me yesterday when he said something about "how I should eat." So, if I can cook my own food while with family, I will and if I can't and there happens to be vegetarian food available, I will eat as a vegetarian.

    So, yeah, I've finished eating my curry-like dish and I think I've pretty much said all I thought to say in this blogpost (and more) so, I'm going to end here.

    What is my shopping like?

    Heyo!

    So, some of you might be wondering what I eat in a day and what my shopping's like. So, I decided to sort out a shopping cart or two online. The edible items in these shopping carts are meant to last till....Sunday or possibly Tuesday depending on how often I prepare my own meals (hmm.....they may last for a fewer amount of time then).

    I normally spend between £29 and £40 a week on produce. That is a lot, I know, but I call it an 'investment in my health.' You see, I used to get sick ever so often so, if you look at the hospital, medical centre bills and what's not, on the long run, this lifestyle would be cheaper compared to me being sick ever so often without it.

    (p.s I may or may not add a few more things to the carts before I pay for the items)




    Okay! So, I just added two items to the Morrisons order. They were 1 litre of Morrisons' 100% Fruit Orange and Raspberry juice and 1 litre Morrisons' 100% Fruit Clementine Juice. They each cost £1.29. When I buy juices from a grocery store or supermarket, I only buy these (meaning that I only by juices at Morrisons) unless I am getting a green juice to drink if I am physically in a grocery store/supermarket. I buy these juices because they are not from concentrates, they do not have any ingredients added apart from actual fruits. So, the clementine juice is freshly squeezed clementines and the orange and raspberry juice are freshly juiced and there are a few more fruits in that one. I buy these juices especially because they're clean, they're nice in smoothies and some times, I just need something sweet to sip on while working and can't be bothered to make a smoothie.

    Yeah! So, that's what my shopping carts are like for the next few days/week. I get good discounts at Morrisons when I go to the actual store and I have a Match&More card too so, although the cost of the produce is this high, I tend to spend much less some times (for example, I once got such a huge discount that I spent just £6 on my shopping at Morrisons).

    Update

    Hey!

    So, here's an update on.....me:

    Okay! So, I completed Cassey's challenge. Y'all knew I had taken it on. HOWEVER, what you didn't know was that I also took on a 30 day 6-pack abs workout. It lasted for 32 days instead of 30, so yeah, they lied to me, just like Insanity did :(. ANYWAYS! I completed that 30 day hoohaa, but not with a faint 6-pack. I didn't really expect to have it in 30 days, but it would have been awesome to. My arms, legs and core did become much stronger and toned during the days I did Cassey's challenge and these 6-pack workouts which is awesome so, yeah.
    I slacked for about a week and a half after completing the 30 day 6-pack abs workout series. However, I'm back to working out. I've taken on the P4P abs workout in the 'how to get a six pack' series and it's going okay so far. Well, I just started it today. It doesn't take up much of my time, which is awesome because I have other things to do like draw and study besides keeping fit, healthy and getting that faint 6-pack.

    FOOD! Now, now, so I was craving a whole pineapple, honeydew melon, papaya or watermelon so, this girl, on her way to the train station to pick up her ticket (after running some other errand in town), stopped by Morrisons and bought a pineapple. I like cut that pineapple down the middle, got a spoon and ate right out out of the pineapple. No need for plates and other hoohaas. It was yummy and satisfied my cravings.
    Also, Morrisons delivers to my school now, which is awesome. However, it means that I would be a bit more lazy as walking down to Morrisons and walking back with heavy bags in both arms was my weekly long walk, exercise thing. I do have to admit that it is easier and less time-consuming for me to just order now as I am getting busier, but to compensate for losing that long walk, whenever, I have the chance to walk anywhere, I do. For example, I visited Musgrove hospital (I wasn't ill, in need of a checkup or anything like that) and I called a taxi because I wasn't sure of how to get there. So, a taxi dropped me off over there. When it was time to leave, I didn't call a taxi, I decided I was going to walk as I had recognised an area we drove by on our way to the hospital so, I found that area and then, because I thought I might get lost and the way we drove down there wasn't the safest for walking, I took a much longer route back to school. It was a nice walk that led me over a river (pedestrian bridge) and through a park and it was refreshing. Another example is when I need to run errands in town like to go to the bank or pick up emergency items and stuff like that, I would rather quick walk than call a taxi and lastly, when I have the chance to run from place to place in school (usually in the evening), I RUN.

    Back to talking about food, I'm still eating a lot of fruits and veggies and whenever I check my inner eyelids, I see that I am far from being anaemic again. I love my fruits and veggies and thanks to them and God, I have been healthy and I did not catch the bug that had been going round in school and in case you didn't know this, I share bottles, spoons, forks and cups with people.

    So, yeah! That's the update! :)

    Getting back in shape

    Hey everyone,

    So, the Christmas and New Year holiday is a horrible time to stay in shape, right? And if you have work to do during the holiday....yep!.....and if your family doesn't eat like you......heck yeah! Staying in shape is pretty much impossible.

    I haven't checked how much I currently weigh. However, from looking at my body, especially from side-view, I knew I had gained a couple of pounds. This holiday, I have had quite a bit of dairy (and yes! I have suffered from my milk allergy, boohoo), I haven't had as much fruits and vegetables as I would normally buy back at school as I haven't done my own grocery shopping since I got home and I have just been forced to eat things I normally wouldn't eat. Yeah, so the weight gain was a pretty unhealthy one.

    Guess what! If you're not happy with what you see when you look in the mirror or how you feel, you need to work on it. So, 6 days ago, I started working on getting back in shape and I am seeing the results already. I took on Casey Ho's 30 days Flat Abs challenge (I'm on day 6 now), I have done some belly dancing, pilates (I usually would do the a day of the challenge followed by some pilates then some cardio), a latin inspired dance workout.... I feel good after working out and that's awesome.

    I'm also drinking more and more water and in large mugs. I have a mug that takes up to 3 cups of water and I drink all that at once and prefer to use that mug whenever I'm drinking water to ensure that I drink a lot of water during the day. As a snack, I have come to love eating circular slices of apple with either cayenne pepper or cinnamon sprinkled on them. When there are clementines around, though.....oh my.....I run out of count with how much I am eating. I LOVE CLEMENTINES!

    Another thing I did (before I actually fully got back to working out daily) is to drink a lemon and cayenne pepper tea. Basically, I just squeezed out the juice and every thing inside (apart from the seeds) of an entire lemon followed by a teaspoon of cayenne pepper, then another teaspoon, then....you can tell I love my pepper :) and then poured some hot water over it, stirred it all up and drank it. I started drinking this before actually reading up on it because I knew of its detoxifying properties (and I had heard about it, the word, 'pepper' stuck out to me so I wanted to try the drink), but here's something I read up on it to summarise what it does:
    Lemon is a natural detoxifier as vitamin C transforms toxins into digestible material. In addition to vitamin C, lemons are also packed with antioxidants and electrolytes including potassium, calcium and magnesium. Lemon is also known to stimulate the liver’s natural enzymes by helping to oxygenate the body.
    Cayenne pepper stimulates the circulatory system by opening the capillaries, aids digestion, and helps regulate blood sugar. Furthermore, and very importantly, it increases the temperature of your body and kick-starts your metabolism, which, yes, can help you to lose weight over time.

    So, yeah, I stopped drinking the lemon and cayenne pepper mixture (I ran out of lemons, boohoo), but I am still working out and drinking a lot of water to flush out nasties that get into my body and I am seeing some pretty good results.

    Food Miles

    Hey!

    So, if you follow me on Twitter, you'll know that I'm not totally against food miles and that I said that I will blog about why I am not 100% against it.

    Okay! So, food miles is basically a measure of the distance covered by your food from where it is produced to the plate of its consumers and it is usually used to make people more aware of the carbon footprints of what they choose to eat and make them more environmentally conscious and basically "save the planet." This sound awesome, doesn't it? So, why am I not totally for it?

    Well, the concept of food miles doesn't take into consideration all that it should do when helping someone judge whether to buy something in order not to promote or encourage businesses and companies that are emitting great amounts of carbon dioxide and other pollutants into the environment and consume TONNES of energy. For example, in the case of growing tomatoes here in the UK, WAY more energy will be consumed than if the tomatoes were grown in a warmer place like Spain and then importing it over here. Or...or....(I'm on a roll here!) growing rice in deserts or citrus fruits in Arctic nations. Their energy consumption and environmental impacts will be HUGE compared to if they were grown in a more suitable nation and then imported by the country that requires them. You see, the carbon emissions can be WAAAAY greater producing some of these foods locally!

    Another thing is that the food miles of the ingredients in the ready-made foods we eat especially those prepared and consumed locally can have LARGE food miles which means that they can have some pretty dandy effects on the environment (pure sarcasm there). Take for instance a Christmas cake and bread sauce both made and consumed in London. These two can have food miles of approximately 34,000 and 10, 800 respectively. Why? Well.....(OH! I AM ON A ROLL HERE!) with the Christmas cake, the sugar could have been imported from Guyana, the orange from Israel, the nutmeg from Indonesia, the lemon from Cyprus and the nuts from Brazil!! That'll be a food mile of 34, 268 if the ingredients were gotten from those countries to be used to make a Christmas cake which will be consumed locally in London.

    Lastly, fair trade. Many of you know what that's all about. Fair trade aims to improve the quality of life of farmers through the selling of their produce. Why wouldn't you want to help them? Especially those who you are way better off than? Huh?

    Okay! So, you see some of the weaknesses of this concept that we call 'food miles' and you can see why I am not totally for it.

    I still eat bananas from Spain, tomatoes (and pasta) from Italy and God only knows where the rest of my fruits and vegetables (and pasta) come from! I actually do not consider food miles when I go shopping. I do prefer to buy organic produce and fair trade when available, but food miles....I honestly do not look out for them.

    Carbon emissions and climate change are a pain, I know, but we can be causing more damage  to the environment producing certain things locally.

    My Possible Lifestyle Change + Why?

    So....I've been looking into a raw vegan lifestyle. Actually, I've just been watching Kristina of  FullyRawKristina and Yulia of RawsomeHealthy's videos and....well....I am not going to become a raw vegan, but I am going to incorporate more raw, vegan foods into my diet. I am considering eating a raw breakfast, a cooked lunch and a raw dinner depending on how lazy I am at dinner time. If I'm to lazy to go for soups at lunchtime, and I hope dinner's good, I'll eat raw at lunch and if dinner ends up being bad, I'll eat raw at dinner too. (Incase I didn't mention it before, I'm a college student who lives at school most of the time, and my school provides most of my meals).

    Why do I plan on incorporating more raw foods into my diet?

    Well....if you read the Bible or (in case you've never read a Bible) any old historical book, you will notice that the people lived WAY longer than we do now. Also, you might notice that your grandparents or (if they're still alive) great-grandparents looked much healthier in the pictures of them while they were young than now. Why? Well....they didn't have all the artificial and synthetic things we have in our foods now. They didn't have so many pesticides and antibiotics in the food they ate and....well.....some of the things we eat now that are totally not good for our health, they didn't have it back then. Food was food not a bunch of chemicals and food.

    Our sugar intakes have increased over the years resulting in people being more obese, becoming diabetic, having a chronic heart disease or even cancer:

    Our intake of sugar-sweetened drinks has increased too:
    Fruit drinks are pretty much unhealthy, just like fizzy drinks. Why? If you notice, on the ingredients list, many of them have the words, "sugar" or "sweetener" on them and whichever of those words is on there is never at the bottom of the ingredients list meaning that there is a significant amount of artificial sugars in what you're drinking so....basically, it's a fruit and sugar drink. Sometimes, it's actually a fruit, flavouring and sugar drink or even just a flavouring and sugar drink!

    Our calorie intake has increased quite significantly because of aggressive marketing, the increase in sugar consumption, processed foods, et cetera:

    The wheat we eat now is less nutritious that the ones our grandparent and their parents and those before them ate:

    We have started eating fast food more often and in higher quantities and we have started spending more on processed foods that we cook or eat in our homes.
    We are killing (or just harming) our bodies with what we put in them.
    Incorporating more raw vegan foods into my diet, I will be eating even healthier, getting all the nutrients I need and because I prefer to eat organic foods, I won't be ingesting all the pesticides and other toxic things that other foods might have. By eating raw vegan, my body will be able to detox itself and simply work better.
    Please note that I do not plan on going 100% raw vegan because I pretty much have an eating disorder called SED so if I go 100% raw vegan I will end up protein-deficient and deficient in a few other things. I am currently a lacto-ovo vegetarian, have been for almost 8 years now and I plan on continuing to be a lacto-ovo vegetarian although I'll be eating as a raw vegan every now and then.
    Why do I plan on going more raw vegan with my life?
    Well....every issue I have had with my body, the allergies (including the reason I had to have surgery on my arms), have been because of things I have put on my skin and what did these things have in common? Chemicals. Toxic. Harsh. Chemicals.
    There was a time I started reacting to my soap, changed it up to one with more natural ingredients, my skin got better, but I started reacting to that one too. I started reacting to my body lotion and the only thing "natural" in that one was sea salt, if I'm right. My hair didn't look so healthy back when I used any product off of the shelf to care for it. The reason I had surgery on my arms was related to a deodorant use and the chemicals in the deodorant. I've also had some serious skin discolouration from the stuff I've put on my skin.
    By using more raw vegan things, I am keeping all those nasty, harsh things away from my body. I went on an underarm detox thing a while back where I used apple cider vinegar straight instead of a deodorant (I ran out of deodorant and was unable to purchase more). My underarms did pretty well and were odourless throughout that period of time! I applied the cider vinegar on it in the morning, at around 6:30am and by the time I went to bed at around 10pm, my underarms were still odourless.
    I plan on using coconut oil as my body lotion (which I do every now and then now), eye cream (I always use it around my eyes), lip balm (always use it as this) and extra virgin olive oil on my face (I break out when coconut oil goes on my cheeks or forehead). I might even switch between a natural butter and coconut oil or make a mix of both for when my skin needs something a little stronger/thicker or a little more protection especially from UV rays.

    I believe God didn't put us in a place where we can't survive. I'm pretty sure He didn't place us in a world where we can't heal and be healthy. What I mean, is that He gave us things that we can live with and use in our everyday life that are actually good for us. Natural things are best for us.
    My grandparents had much healthier skin when I was younger and in the pictures I see of them before I was born than they have now. Why? Most of the products they use now are so chemical-laden and less natural than the ones they used to use. My nana and I both have really sensitive skin and we have had quite a number of skin allergies thanks to what we've put on our skins.
